Veal Paprika

This is terrific for a company dinner

Ingredients

4 veal fillets, about 175 g (6 oz) each
1 tablespoon lemon juice
4 tablespoons tomato puree
3 teaspoons paprika
300 ml (1/2 pint) natural low-fat yogurt
salt and pepper

Directions

Put the veal fillets on the rack of a grill pan. Cook under a fairly hot grill for about 5 minutes on each side (depending on the thickness of the fillets), spooning over some of the lemon juice to prevent the meat burning.

Mix together the tomato puree, paprika and remaining lemon juice and heat gently. Remove from the heat and stir in the yogurt and salt and pepper to taste.

Put the veal fillets on a warmed serving plate and pour the sauce over.

This sauce has a rather sharp taste. If you prefer a slightly sweeter sauce, use fresh orange juice instead of the lemon juice. Alternatively, you could add a few drops of artifical liquid sweetener just before serving.
