Not overly sweet, these peanut butter cookies are ideal for lunch box packing.

Ingredients

1/2 cup soft butter or margarine
1/2 cup brown sugar, packed
1/2 cup peanut butter, creamy or crunchy
1/2 tsp. vanilla extract
1 egg
1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 cups all-purpose flour

Directions

Cream butter with sugar and peanut butter. Add vanilla and egg; beat until fluffy.

Stir in baking soda and salt. Blend in flour. Mix until a stiff dough forms.

Shape into walnut-sized balls. Place on lightly greased cookie sheets. Press with a fork to flatten.

Bake at 375F for 10 to 12 minutes or until lightly browned.

Comments

For extra crunchiness, add 1/2 cup chopped peanuts to the dough after mixing in the flour. Makes 2 dozen
