Rice with Carrots and Broccoli |

This deliciously simple combination of rice, broccoli and carrots is tossed with a warmed butter, olive oil and garlic mixture.
Ingredients
1 cup long grain rice
1 pkg. (10 oz) frozen broccoli, cut into bite-size pieces
2 carrots, peeled and sliced
1 Tbs. butter or margarine
2 Tbs. olive oil
2 cloves garlic
1/2 cup grated Parmesan cheese
1/4 tsp. cracked black pepper
Directions
Cook rice according to package directions.
Cook the broccoli in 1/2 cup boiling salted water for 5 minutes or until tender-crisp. Drain.
Cook the carrots in 1/2 cup boiling water for 6 to 8 minutes.
In a saucepan, heat the butter, oil and garlic until warmed. In separate bowl, combine the rice, broccoli and carrots. Toss with teh butter mixture, cheese and black pepper. Serve hot with extra Parmesan cheese, if desired.
Comments
Good served with Roast Pork, stuffed onions, hard rolls and a sparkling beverage.
