Curried Tuna Melts

These quick-to-assemble sandwiches can be served with a fruit or vegetable salad at a luncheon or with tomato soup and vegetable sticks for a light meal.

Ingredients

1 can (7 oz.) tuna, drained and broken into chunks
1/4 cup chopped celery
2 Tbsp. raisins
2 Tbsp. sliced green onion
1/4 cup mayonnaise
2 tsp. lemon juice
1/4 to 1/2 tsp. curry powder
1/4 tsp. salt
2 English muffins, split and lightly buttered
4 slices Cheddar or American cheese
Celery leaves for garnish

Directions

Combine tuna, celery, raisins and green onion in a small bowl.

In a measuring cup, stir together mayonnaise, lemon juice, curry and
salt. Fold into tuna mixture.

Toast English muffins. Immediately spoon tuna mixture on muffins.

Top each sandwich with a cheese slice.

Broil for 2 to 3 min. or until cheese melts. Serve hot, garnished with celery leaves
