Oven Fried Fish Fillets |

This is a simple and delicious treatment for fresh fish fillets. They are covered with crisp herb-flavored crumbs and drizzled with butter.
Ingredients
1 1/2 lbs. fresh fish fillets, such as salmon, trout, bassorwhitefish
1/2 cup milk
1/2 cup all-purpose flour
1 tsp. each salt, dried basil and chervil leaves
1 egg, beaten
1/2 cup fine dry bread crumbs
1/3 cup melted butter or margarine
Parsley and lemon wedges for garnish
Directions
Wash fish and pat dry. Cut into serving pieces. Dip fish first in milk,
then in mixture of flour, salt, basil
and chervil.
Add the egg to remaining milk. Add the crumbs to remaining flour mixture.
Dip fish pieces into milk-egg mixture, then into flour-crumb mixture. Place into buttered baking dish. Drizzle with melted butter.
Bake at 450
Comments
Good served with: Boiled new potatoes, buttered green beans or fresh asparagus and grated carrot salad.
