Basque Style Potatoes |

Dress up mashed potatoes with the addition of a savory sauce to make this attractive and delicious dish. Prepare the sauce ahead, if you wish.
Ingredients
1 small onion, minced
1 small clove garlic, minced
1 small green pepper, chopped
2 Tbs. butter or margarine
1/3 cup coarsely chopped pitted black olives
1 can (8 oz.) stewed tomatoes
1/4 tsp. EACH dried basil and oregano
1/4 tsp. salt
Dash black pepper
2 cups prepared mashed potatoes (instant may be used)
2 Tbs. grated Parmesan cheese
Chopped parsley
Directions
In small skillet, saute onion, garlic and green pepper in heated butter until onion is tender.
Add olives, tomatoes, herbs, salt and black pepper. Bring to a boil. Simmer 5 minutes.
Spread potatoes evenly into shallow 1 1/2-quart baking dish or 9-inch pie pan. Cover with the sauce. Sprinkle with cheese.
Bake at 400 degrees for 15 minutes or until hot and bubbly. Sprinkle with parsley.
Comments
Good served with hamburgers, roast beef, steak or chicken.
