Cucumber Rings

Ingredients

1 3-oz. pkg. soft cream cheese
1 Tbs. minced chives or onion
1 Tbs. snipped parsley
1 tsp. mayonnaise
1/4 tsp. paprika
1/2 tsp. lemon juice
1 pared medium cucumber

Directions

Combine all ingredients except cucumber. With apple corer, scoop out inside of cucumber; fill with cheese mixture.

Refrigerate until serving. Slice 1/4" thick.
